Toasted Coconut Cake Recipe

We were asked by Kraft to try out one of their "foolproof" spring dessert recipes. Since my husband loves coconut cake, and I've never made one before, I enlisted my favorite baker to help.

What makes this recipe so easy is that you start with basic yellow cake mix batter. Then you add coconut flakes, milk, and dry Jell-O coconut pudding mix to the batter to make it extra "coconutty" and moist.

  • 1 package yellow cake mix (2-layer size)
  • 2 2/3 cups Baker's Angel Flake Coconut
  • 1 1/4 cups cold milk
  • 1 package Jell-O Coconut Cream Flavor Instant Pudding (3.4 oz.)
  • 1 package Jell-O Vanilla Flavor Instant Pudding (3.4 oz.)
  • 1/4 cup  powdered sugar
  • 1 tub Cool Whip (8 oz.)

Preheat oven to 350°F.

Prepare cake batter, then stir in 2/3 cup coconut, 1/4 cup milk and dry coconut pudding mix into batter before pouring into prepared pans. Bake as directed on cake mix package. Cool cakes in pans 10 min. Remove from pans to wire racks; cool completely.

Beat dry vanilla pudding mix, sugar and remaining milk in large bowl with whisk 2 min. (Pudding will be thick.) Stir in COOL WHIP. Refrigerate until ready to assemble cake.

Stack cake layers on plate, filling with layers of 1 cup of the pudding mixture and 3/4 cup of the remaining coconut. Frost top and side of cake with remaining pudding mixture. Press remaining coconut into pudding mixture. Refrigerate 1 hour.

The official taster had to do her job! She gave it a big thumbs up and liked how light and fluffy it was, but just to be sure, had to do a few more tastings. Then came the fun part. The stacking, frosting, and coconut sprinkling!

To add my own twist, I toasted  coconut flakes in the toaster, watching them carefully as not to let them burn, and sprinkled them on top. They added a nice toasted coconut flavor and made the cake looked so pretty.

And finally, Daddy got to taste it, and can you believe he ate that whole piece?!

There is nothing better than a "girls night in," hanging out with girlfriends (preferably in pajamas), binge watching a show, eating something decadent, like greasy fried chicken, and drinking something delicious.

I was asked by Trop50 to incorporate their raspberry açaí juice blend into a yummy drink.

Now that I'm a mom, I can't handle a fancy cocktail the way I used to, so I decided to come up with a refreshing "mocktail" recipe that can, of course, be easily turned into a cocktail, but tastes great on its own. This drink would also be perfect to serve to guests on a hot summer day, it's that refreshing.

I'm always looking for balance in my recipes. So to compliment the sweetness of the juice, I added sparkling water to give it fizz. To add a little acid punch, I squeezed some fresh grapefruit into the glass. And to give it a clean finish, I garnished it with mint.



  • 1/4 cup Trop50 Raspberry Açaí juice blend
  • 1/4 cup grapefruit juice
  • 1/2 cup sparkling water
  • 1/2 cup ice
  • 4 raspberries
  • 2-3 mint leaves
  • Add ice to the glass
  • Add the grapefruit juice
  • Add the sparkling water
  • Add the Trop50
  • Garnish with raspberries and mint leaves

Virginie, from That Cute Little Cake is here with a clever craft to make your St. Patrick's Day pop (literally)!

Here is a fun favor idea for St Patrick's Day! Leprechaun hat poppers!!!

Although the first couple of steps are best done by an adult, the decoration of the hats would a be a fun family project.

  • Craft roll (I used a kitchen towel cut  in 2 inches tubes)
  • Tissue paper (green or black)
  • Cardstock in green, black, and yellow
  • Craft glue and small brush
  • Scissors
  • Twine or ribbon
  • Your choice of candy to fill
  • The printables used are from the free printable page on Catch My Party

First you need to close one of the circular ends of your craft tube.

  • Cut a piece of tissue paper about an inch bigger than the diameter of the tube. Use the scissors to cut small slits all around the circle, it will make it easier to glue.
  • Glue the tissue paper circle to one end of the tube with slightly diluted glue, using the brush to gently pull the paper down around the tube.

Now you need to close the other end of the tube but this time it is the "popping" end, therefore you need a handle to rip the tissue paper open when you pull.

  • Cut a circle of black cardstock slightly smaller than the diameter of the craft tube. Pierce a hole in the middle (with a skewer for example) and thread the twine through. Secure the twine with a knot and you may even tape the knot to the cardstock.
  • Cut a circle of tissue paper bigger than the tube, like you did in step one. Pierce it in the center and thread the twine through
  • You now have a piece of cardstock on top of the tissue paper, with the twine going through
  • Fill the tube with candy
  • Close the tube with the tissue paper (repeat step 1), making sure the card stock is inside the tube
  • You now have a popper, you just need to decorate it to look like a hat

Cut all the pieces for the hat from the colored cardstock
  • From the green cardstock, cut:
    • A circle the size of the tube for the top of the hat
    • A rectangle the width of the tube and long enough to wrap around the tube
    • A circle about two inches bigger than the diameter of the tube for the base. Cut a hole in the middle slightly smaller than the size of the tube to make it easier to glue
  • From the black cardstock, cut a 1/2 inch strip to make the belt
  • From the yellow cardstock, cut the buckle

My 6 Party Clean Up Tips

6 Tips for Cleaning Up After a Party |

I love everything about throwing parties except... clean up! In fact, it's one of my least favorite things to do. My husband is of the mindset that we should leave the mess until the morning, but that's just not how I roll. I'm not super Type-A about cleanliness, but I do need to put things back into some semblance of order to be able to go to bed.

So here are my tips for avoiding that dreaded let-down called "after-party clean up."

1. Make sure you've prepped your house beforehand. Clear up counter space to make room for dirty dishes, and make sure your dishwasher is empty before the party even starts.

2. Use disposable flatware, plates, and napkins if you're having a lot of guests. While not the best eco-friendly option, no one wants to run load after load in the dishwasher, which also uses water, electricity, and soap.

3. Enlist a friend, and together do small amounts of clean up during the party. I like to grab a friend, and while we're chatting,  both do a little clearing or putting things back in the fridge.

4. Now that spring is almost here, host your party outside. No one worries about spilled wine on the grass.

5. But just in case, keep a spray bottle of vinegar and water around (my favorite stain remover). It will come in handy when chocolate cake ends up on your white couch.

6. After the party is over, use this mental trick while cleaning up. Instead of focusing on your disheveled house, reminisce about the best or funniest moments of the party (this is fun to do with your husband or friend). It will make the task at hand seem that much more palatable, and probably make you want to do it again... kind of like childbirth. :)

You’ll need lots & lots of color! Nothing says rainbow party without it. And adding stripes, or polka dots will add a fun touch! I used many colors, and even paired them with polka dots, and chevron prints.

A fun backdrop adds so much to a party! I decided to keep my backdrop simple with items I already had around the house, and opted to save the rainbows for the party printables.

3. Party printables

Michelle from Printabelle has some of the cutest printable sets I’ve seen. I found her free rainbow party printables here on Catch My Party. I used the printables for the party favors, the drink bottles, straws, and treat bags. You can download the whole rainbow collection and go to town decorating!

I also came across the most darling rainbow cupcake toppers by Blanca of Creativities Galore! They were so sweet, and I just knew I had to have them for my rainbow party. I put one in each of the guest’s mini cupcake. Don't they look sweet!

4. Fun Party Guest Favors

The possibilities are endless for guest favors, especially for a rainbow party. At my party, each guest got to take home a special handcrafted rainbow party crown made by the very talented Shawna of Shawna Brockmeier Styled Events and a colorful bottles of bubbles.

5 Easy Super Bowl party ideas!

The Super Bowl is finally here! While some fans will be braving the cold watching the game at the stadium, here are some tips and ideas for enjoying the game in the comfort of your own warm home, surrounded by friends!

1) Free football party printables

Party printables are a great way to give your party style and polish without spending a ton. I used the free Game Day printable set on Catch My Party to decorate my table. There were so many fun files to choose from. I used the banner, water bottle labels, signs, and straw flags. I just printed them out, cut them out and got styling!

They even have a downloadable printable file with team logos you can use!

2) Artificial turf as my tablecloth

I used a roll of artificial turf that I picked up at Home Depot for less than $20, and set it out as my table cover. It was the perfect way to set the stage for my table.

3) DIY Decor

I found a couple of small, clear clipboards from the 99cent Only Store, and spray painted them black. They served as great holders for the signs I created to decorate my table. I also wrapped a piece of foam board with black and white chevron wrapping paper to serve as my table backdrop.

 4) Inexpensive serving dishes and plates

I also set out my food using football themed party trays & platters I found at Target a few years back. The paper plates and napkins were from Party City. I just keep my eye out for inexpensive themed trays and platters, and have started a collection.

5) Party food

I served fun, festive, and inexpensive finger foods. Who doesn't like pizza at a football party? I served pizza bread & dipping sauce as my main dish...

I also served popcorn in mini bags to make my guests feel like they were at the game...

 Sunflower seeds in cute paper cups for those nervous ball watchers...

And chocolate cupcakes for a quick, easy dessert! My cupcakes were store bought, so I dressed them up with printable toppers and themed cupcake wrappers.

I also added labels to the water bottles, and added printable straw flags to my brown and white paper straws. This gave my beverages a simple makeover.
