Cinderella Dessert Table Treats

by Jillian Leslie on

Cinderella Birthday Party Dessert Table Treats | CatchMyParty.com

I took Lainey, my daughter, to see the new Cinderella movie last week and we both loved it! It was true to the original movie, but seeing it with live action characters, made it feel even more real. We were totally swept up in the drama and romance.

With all the excitement around the movie, we are definitely seeing more Cinderella parties being added to Catch My Party.

So when I was asked by Party City to come up with a few Cinderella birthday party dessert table treats, I knew exactly what I wanted to do. I wanted to make treats that were easy, inexpensive, and would look terrific at an upcoming Cinderella party!  Here's what I came up with...

Cinderella Birthday Party Dessert Table Treats | CatchMyParty.com

White Chocolate Covered Pretzel Wands

  • Light blue candy melts
  • Pretzel rods
  • White candy pearls

Melt the candy melts in the microwave at 30 second intervals, mixing after each interval, until the chocolate is melted.

Spoon the melted chocolate onto the pretzel rods.

Place pretzel rods a baking tray covered in wax paper to let dry. After about 30 seconds, while the white chocolate is beginning to harden, sprinkle with white pearls.

Cinderella Princess Popcorn

  • Light blue candy melts
  • Microwave popcorn
  • Mini marshmallows
  • Blue sanding sugar

Make your popcorn according to microwave directions.

Melt the candy melts in the microwave at 30 second intervals, mixing after each interval, until the chocolate is melted.

Spread your popcorn on a baking tray covered in wax paper.

Spoon melted chocolate onto popcorn. Mix with your hands until it's as coated as you like. Mix in mini marshmallows and sprinkle with sanding sugar.

Stacked and Frosted Pumpkin Cookies

  • Thin cookies (I liked the Cookie Thins from Trader Joes because of the scalloped edges)
  • Wilton Decorating Icing
  • Wilton Pumpkin Icing Decorations
  • Blue sanding sugar
  • White pearls

Lay out three cookies. On each cookie, squeeze icing in a circular pattern leaving about a 1/4 inch rim around the cookie.

Stack the three cookies. On the top cookie affix your pumpkin, then sprinkle blue sanding sugar. You can also use white pearls as accents.

Finally, one of the most spectacular things about the movie was Cinderella's blue dress! Here is Lainey dressed in her new Cinderella dress from Party City inspired by the movie. She especially loved the gloves. Isn't she such a princess?!

White Chocolate Peeps DIY

by Jillian Leslie on

Easy White Chocolate Peeps Craft for Easter! | CatchMyParty.com

Today we're sharing a white chocolate Peeps DIY from Shauna at Ella and Annie Magazine! How fun are these for the kids on Easter?!

Peeps are a springtime favorite in my family, and they are even better on a stick covered in white chocolate and sprinkles!

These would be a great addition to traditional Easter desserts or as spring party favors. Plus, they are simple to make.

Final Chocolate Peeps | CatchMyParty.com

  • Peeps (if you can find white, they would cover best with chocolate)
  • 12 bags white chocolate chips or white candy melts
  • Lollipop sticks
  • Pastel sprinkles
Ingredient Peeps on Sticks | CatchMyParty.com

Start by melting your chocolate. I always add about 1⁄2 teaspoon of oil to chocolate. I find this helps it melt smoothly. Microwave on low for intervals of 30 seconds. Stirring each time until melted.

Dipping Peeps | CatchMyParty.com

Dip the end of the lollipop stick into the chocolate and then into the bottom of the peep. Allow chocolate to harden.

Dipping Peeps | CatchMyParty.com

Repeat with remaining Peeps. You can place them in refrigerator for 5 minutes to speed up the process.

Taking a spoon, scoop the chocolate over the peep until covered.

Immediately add sprinkles.

Place end of stick into a styrofoam block so the peeps can dry.

Serve! They would also be cute placed in a clear cellophane bag tied with pretty ribbon.

Coconut Blueberry Bar Recipe

by Jillian Leslie on

Healthy Coconut Blueberry Bar Recipe | CatchMyParty.com

My daughter is a very picky eater. Getting her to eat healthy can be a challenge. So when we were asked by PAM to come up with a healthy and seasonal dish, I decided to focus on blueberries. Not only are they a super food and taste so good in spring, they are also my daughter's favorite berry. Here is my delicious coconut blueberry bar recipe, perfect for the picky eater.

What makes these blueberry bars so successful is the blending of flavors. There's nuttiness and a touch of saltiness from the almond flour in the crust, tartness and fruitiness from the blueberries (with no added sugar), sweetness from the crumble, and crunch from the sprinkled toasted coconut slices.

We used PAM Coconut Oil cooking spray to grease the pan. This cut down on added fat in the dish, and made cleanup a breeze. And, since I've been reading about the health benefits of coconut oil, I was happy to incorporate it.

Coconut Blueberry Bar Recipe

Makes: 16 squares Time: 60 minutes

for the filling

  • 2 cups of blueberries
  • 1 tablespoon lemon or orange zest plus 1 tablespoon of the juice

for the topping

  • 1/4 cup packed brown sugar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick) melted butter
  • 1/2 cup all-purpose flour
  • 1/4 cup almond meal
  • 1/4 cup shaved unsweetened coconut

for the crust

  • PAM Coconut Oil Spray
  • 1/2 bag graham crackers
  • 1/4 cup almond meal
  • 1/4 cup (1/2 stick) melted butter
  • 1/4 teaspoon salt

Melt the butter (about 30 seconds on high in the microwave). Put the graham crackers, almond meal, and salt into a food processor and pulse until broken down into crumbs. Add the melted butter and pulse until combined.

Spread the crumbs along the bottom of the pan, and pat down to form the crust.

Put the blueberries in a saucepan over low heat. Mash them with a fork a bit to get the juices flowing. Add the lemon zest and lemon juice (lemon, lime, or orange would all work well with blueberries).

Simmer for about 20-30 min, stirring occasionally until it thickens. If you are in a rush, you can simmer for 10 minutes and add a teaspoon of cornstarch to thicken.

Let it cool for 5 minutes, then spread it on top of the bars right up to the edge, but leaving a little bit of crust exposed.

Add 1/4 cup brown sugar, 2 tablespoons of granulated sugar,  1/2 cup of flour, 1/4 teaspoon of salt, and 1/4 cup of almond meal to a mixing bowl, and stir until combine. Pour in a 1/4 cup of butter, and work with your hands until it starts to clump and look like crumble.

Sprinkle the topping onto pan.

Bake at 350F for about 45 minutes, until the topping is nicely browned.

Toast 1/4 cup coconut slices in the toaster until golden brown. Sprinkle on top of the bars. Eat and enjoy!

The best part is that these bars are filled with all whole ingredients, and as a mom, I feel really good about serving them to my family (and my picky daughter)!

Crustless Bacon Spinach Cream Cheese Quiche Recipe

by Jillian Leslie on

Crustless cream cheese quiche recipe, low carb with spinach and bacon | CatchMyParty.com

With Easter coming up, we were asked by Philadelphia Cream Cheese to create a recipe that would be easy to serve at Easter brunch. So enter my... crustless bacon spinach cream cheese quiche recipe. I know, what a title!

I made the quiche crustless by serving it in individual ceramic tart dishes. I thought I would miss the crust, but the quiche is so light and fluffy and flavorful, I honestly didn't.

The bacon adds a rich smokiness. The sautéed spinach give it some good umami flavor. But my favorite part of the quiche is the cream cheese. It doesn't spread during baking. Instead, you are left with these creamy sour bites throughout. It was the ingredient that brought the most brightness and uniqueness. I promise, you will enjoy this recipe.

Crustless Bacon Spinach Cream Cheese Quiche Recipe

  • Servings: 6
  • Prep Time: 20 minutes
  • Cook Time: 20 minutes
  • 3 large eggs (or 4 medium)
  • 1 1/2 cups heavy cream
  • 1 6 oz bag of spinach
  • 3 slices cooked bacon
  • 1 teaspoon thyme
  • 3 oz. Philadelphia Cream Cheese (brick)
  • 1 teaspoon kosher salt
  • 1 teaspoon olive oil

Preheat oven to 350F.

Chop and sauté the spinach in a pan with 1 teaspoon of olive oil, and and 1/2 teaspoon of salt. Thoroughly drain, and use a paper towel to get as much moisture as possible out of the spinach.

Put 3 large eggs in a bowl, and lightly whisk until the whites and yolks are completely combined. Add 1/2 teaspoon of salt, and 1 1/2 cups of cream, and lightly whisk until combined.

Roughly chop the bacon, and cut the cream cheese into 1/4 inch cubes.

Put six tart dishes on a baking sheet. Divide the spinach, thyme, bacon, and cream cheese evenly amongst the dishes.

Pour the liquid mixture into each dish, until it is about 3/4ths full. You can gently stir with a spoon if any of the ingredients are poking out of the top.

Note that we used 5 oz tart dishes which make nice single servings, but any cookware will work. There should be just over 2 cups of liquid.

Move the baking sheet to the oven, and cook for about 20 minutes, until the center is no longer liquid, but it should jiggle and have a soft texture.

Serve hot or cold. These will last in the fridge for 3 days, so you can make them beforehand and pull them out for brunch. They reheat nicely, one minute in the microwave.

Philadelphia Cream Cheese has been my favorite cream cheese since I was a child. Now that I'm an adult, it’s fun to find new ways to use it!

Thanks to Philadelphia Cream Cheese for allowing me to partner with them to come up with some fresh and delicious recipes for the Easter season! Do you have any favorite Easter recipes using Philadelphia? I’d love to hear your favorites in the comments below.

**Note: I came up with this recipe and it is not an original Philadelphia Cream Cheese recipe.
