No-Bake Espresso Pie RecipeIngredients:
- 1 cup Mocha Iced Coffee
- 2 containers of Cool Whip (thawed)
- Instant chocolate pudding mix
- 1 teaspoon vanilla extract or coffee extract
- Chocolate syrup
- Oreo cookie crust
Combine mocha iced coffee, chocolate pudding, and coffee extract. Whisk until combined. Fold in one tub of the thawed Cool Whip. Pour the pie filling into the pre-made Oreo cookie crust. Place pie in the freezer for 5-6 hours until frozen solid.
When pie is frozen, spread a layer of cool whipped topping on the pie. Drizzle some of the chocolate over the cool whipped topping. Use a toothpick to make pretty swirls in the whipped cream.
Keep pie frozen until ready to serve. Enjoy!! I would totally recommend this pie for breakfast. (It could replace your coffee, wink wink:-).
Note: the coffee extract gives the pie a stronger “coffee” flavor.
