We were given a basket of goodies from Kraft and asked to come up with our own recipe. How fun, especially when the basket contained two of my favorite ingredients.... chocolate and marshmallows!

I knew instantly I wanted to make cookies. But sometimes it's hard to add marshmallows to cookies because when you bake them, the marshmallows can sort of evaporate.

So we decided to try something different. We froze the mini marshmallows, then placed them inside the cookie dough before baking. And it totally worked! Here's Lainey wrapping the cookie dough around three mini marshmallows.

Also, I added walnuts to the recipe because I like have a nutty crunch to my chocolate cookies, but feel free to leave them out.

CHOCOLATE WALNUT MINI MARSHMALLOW COOKIE RECIPE

Ingredients:

  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup butter (2 sticks)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 8 oz semi sweet Kraft Baker's Chocolate
  • 2 cups walnuts
  • 2 cups Kraft Jet Puffed Mini Marshmallows
Directions:

A few hours before you start, take two cups of mini marshmallows and put them in the freezer. Take out two sticks of butter and let them come to room temperature.

Preheat the oven to 325F.

In a large bowl, mix the flour, baking powder, and salt and set aside.

In a second bowl, add the butter, eggs, brown sugar (firmly packed), granulated sugar, and vanilla. Beat on high for two minutes. Break the chocolate into squares, and melt in a double broiler, or microwave on high for one minute. Add the melted chocolate to the wet ingredients, and mix until completely incorporated.

Mix the dry ingredients into the wet in thirds.

Crumble the walnuts. and fold into the dough. Chill for 30 minutes.

Take the marshmallows out of the freezer. Use about two tablespoons of dough and press three mini marshmallows into the center. Ball the dough up and around, completely covering the marshmallows.

Bake for about 8 minutes, until the cookies are just barely cooked. If you overcook, the marshmallows will melt and dissolve. The cookies will still taste great, but you won't get the nice white chewy marshmallow center.

Makes about 2 dozen.

Homemade Chocolate and Cinnamon Marshmallow Recipe

Homemade marshmallow recipe
I love the taste of homemade marshmallows. That's why I'm delighted to share this recipe for homemade chocolate and cinnamon marshmallows that Mindy Cone from Creative Juice developed just for us! These are perfect light and airy pillows of deliciousness that would be perfect in your hot cocoa or  just in your mouth.
First the chocolate marshmallows...
HOMEMADE CHOCOLATE MARSHMALLOW RECIPE
Ingredients:
  • 3 packages of unflavored gelatin
  • 1 cup water (divided)
  • 1 cup light corn syrup
  • 1 1/4 cup sugar
  • 4 oz chocolate
  • 2 Tbsp. cocoa powder
  • 2 Tbsp. cornstarch
  • 2 Tbsp. powdered sugar (or cocoa powder)
Place the gelatin and a half cup of water into your stand mixer bowl and set aside for 5 minutes to allow the gealatin to bloom.
In a small saucepan bring a half cup of water, corn syrup, and sugar to a boil until the mixutre reaches the soft ball stage (240 degrees using a candy thermometer).
Remove immediately from the heat.
Use your whisk attachment and begin whisking the water and gelatin on low speed while slowly pouring in the hot candy mixture.
Once you have poured it all in, turn your mixture up to medium high.
While that is whisking, melt 4 oz of chocolate and combine it with the cocoa powder.
Add the chocolate and continue to whisk until until the mixture thickens and is warm to the touch.
Combine the cornstarch and powderd sugar (or cocoa powder) in a small bowl.
Grease a 9x13 pan and dust with this powder mixture to coat. Reserve any remaining mixture for later.
Pour the chocolate marshmallow filling into the 9x13 and spread it evenly in the pan. Dust the top with the powder mixture. Leave uncovered at room temperature for 4-6 hours.
To cut your marshmallows, dust your working surface with the powder mixture and turn the marshmallows out of the pan. Use a pizza wheel or a sharp knife to cut squares. Once the square is cut, toss in the powder mixture.
Makes: about 24 1-inch marshmallows.
Store: in an airtight container for up to 2 weeks

When it comes to dessert, there’s nothing more elegant than chocolate covered strawberries. From Valentine’s Day to Mother’s Day, chocolate covered strawberries are the perfect treat to show your love. Why not take it to a whole new level with chocolate covered strawberry cupcakes? These are sweet strawberry cupcakes topped with chocolate glaze and decked with a homemade chocolate covered strawberry!

Chocolate Covered Strawberry Cupcakes

Makes 12 cupcakes

Ingredients:

  • 1/2 C Butter
  • 1 1/4 C Sugar
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1 1/4 C Flour
  • 1 3/4 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1/2 C Pureed Strawberries

Directions:

Preheat your oven to 350 degrees.

In a separate bowl, combine flour, baking powder, and salt. Set aside.

Cream the butter and sugar until fluffy.

Beat in eggs one at a time. Then add the vanilla extract and mix well.

Add a third of the flour mixture to the butter mixture and beat until incorporated.

Add half of the pureed strawberries and mix well.

Add another third of the flour mixture, mix, and then add the remaining pureed strawberries. Add the remaining flour and continue beating until well mixed. Using a measuring cup, pour batter into a lined or greased cupcake pan.

Bake for 16-18 minutes until golden.

While cupcakes are cooling, make the Chocolate Covered Strawberries!

 

Chocolate Covered Strawberries

Makes 12 chocolate covered strawberries

Ingredients:

  • 12 Fresh Strawberries
  • 2 C Milk Chocolate Chips
  • 1 Tbsp Butter

Directions:

Wash the strawberries and dry them well with a paper towel. Place them on a baking sheet lined with wax paper.

Microwave chocolate chips in a microwave-safe bowl, stopping to stir every 30 seconds. Once melted, stir in the butter until smooth.

Holding the stem, dip each strawberry in the melted chocolate. Swirl the strawberry to remove any excess chocolate.

Place the chocolate covered strawberries on the prepared baking sheet. Refrigerate until chocolate hardens, about half an hour.

While Chocolate Covered Strawberries are hardening, prepare the Chocolate Glaze.

 

Chocolate Glaze

Ingredients:

  • 1/2 C Chocolate Chips
  • 1/4 Tbsp Butter
  • 1 1/2 C Powdered Sugar
  • 2 Tbsp Milk
Directions:

Microwave chocolate chips in a microwave-safe bowl, stopping to stir every 30 seconds. Once melted, stir in the butter until smooth.

Combine melted chocolate, powdered sugar, and milk and whisk well.

Assembly:

Once cupcakes have cooled, use a spoon to smooth Chocolate Glaze over top. Drizzle with additional melted chocolate, if desired. Top each cupcake with one Chocolate Covered Strawberry.

DIY TUTORIAL: How to Make Chocolate Painter's Palettes

I last featured Pamela S's Aly's "I Love Art" Party in a recent party on a budget post. She threw the whole party for $100 and one of the ways she did it, was to make her own favors.

For the little kids she made homemade "art supply"  favors (I know, great!), and for the older kids, she made these chocolate painters' palettes. So cute. Well, here's how...

I made these chocolate painter's pallets for the older kids who wouldn't go for all of the "art supplies", which went over very well.

I created a template which you can download  for free.

 
  1. I printed out my template, placed it on a cookie tray and covered it with wax paper.
  2. In a double boiler I melted chocolate then placed the melted chocolate in a piping bag.
  3. With the piping bag I traced the outline of the palette on the template then filled in the outline with more chocolate.
  4. I used the back of a spoon to smooth each palette out then placed a red, yellow, green and blue M&M onto the soft chocolate to resemble paint drops.
  5. When finished, I popped the tray into the fridge to harden the chocolate.
  6. Once they were hard, I wrapped each pallet in a plastic bag and tied it up with bakers twine.
