{RECIPE} Pulled Pork Sandwich with Spicy Asian Slaw

My husband loves pulled pork sandwiches, so I thought I'd post our favorite pulled pork recipe that goes beautifully with our yummy spicy Asian slaw.

This dish would be perfect to serve at a Super Bowl party!!

PULLED PORK

Ingredients:

  • 1 bone-in pork butt (6 to 8 pounds)
  • 1/3 cup kosher salt
  • 1/2 cup brown sugar
  • 2 teaspoons paprika
  • 2 teaspoons chili powder
  • 1 tablespoon dry mustard
  • 1 tablespoon garlic powder

Directions:

Prepare the rub by mixing together the brown sugar, salt, paprika, chili powder, garlic powder, and dry mustard.

Cut through the fat on the top of the shoulder in a 1 inch crosshatch pattern. Cut through the fat, but try not to cut into the meat.

Rub the mixed seasoning on the entire shoulder and into the cuts on the top.

Wrap tightly in plastic wrap and put in the refrigerator over night (at least 12 hours). We put ours on a cookie sheet to catch any drippings.

When you are ready to cook, preheat the oven to 325 degrees and lower the rack to its lowest position.

Unwrap the shoulder, and wipe of any excess rub off that hasn't been absorbed into the meat. Place the shoulder on a greased rack in a roasting pan with 3-4 cups of water in the bottom to keep the drippings from burning.

You can baste the shoulder a few times with the liquid during the cooking process. We refilled the water once about half way through.

Cook until the internal temp is at least 190 degrees. If you take it out too soon, the meat won't be tender. A probe thermometer is very helpful as the cooking time can vary depending on the size of the shoulder and the over. Our 7lb. shoulder took 8 hours to reach 190 degrees.

Here it is right out of the oven.

Let the shoulder rest for an hour, then use two forks to pull it apart. It should shred easily.

SPICY ASIAN SLAW

Ingredients:

Slaw

  • 2 cups napa cabbage (about half a head)
  • 2 cups radicchio (about half a head)
  • 1 grated carrot
  • 1/4 cup chopped cilantro
  • 1/2 cup chopped green onion
  • 1 tablespoon toasted sesame seeds
Dressing
  • 2 teaspoons dry Chinese or English (Coleman's) mustard
  • 1/4 cup rice wine vinegar
  • 1 teaspoon soy sauce
  • 1 tablespoons light sesame oil
  • 2 tablespoons peanut oil
  • 1/2 teaspoon chili oil
  • Salt
  • Freshly ground black pepper

 

Directions:

Quarter the cabbage and radicchio, and cut out the hearts. Slice thinly and mix with the onions, cilantro, and carrots.

Mix together the dressing ingredients.

Add the dressing to the chopped vegetables.

Toss with the sesame seeds to taste.

And here's the final product again... Yum!!

Tangy, Spicy, Crunchy Baked Buffalo Wings

What could be better for a Super Bowl party than delicious, messy, juicy Buffalo wings!

Here's my husband's favorite Buffalo wings recipe. We try to make them a little healthier by baking them (and this way you don't have to worry about the hassle of frying), but I promise you do not sacrifice on flavor. You still get all that tangy, spicy, crunchy goodness!

The blue cheese dipping sauce (which is very blue cheesy, btw) is a perfect counterbalance to the heat from the wings. And we like to keep things pretty traditional by using Frank's Louisiana Hot Sauce.

I promise these wings will get your guests talking, or at least saying, "Mmmmm...," while they're wiping their mouths.

CHICKEN WINGS

Ingredients

  • 18-20 wings
  • Salt
Directions
  1. Pat your wings dry (it will help them crisp up)
  2. Generously salt  wings.
  3. Place wings on a wire rack
  4. Bake at 450 degrees for 45 minutes or until  golden brown.
While the wings are baking you can prepare your sauce.

SAUCE

Ingredients

  • 4 tablespoons (1/2 stick) butter
  • 1/2 cup hot sauce , preferably Frank's Louisiana Hot Sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon brown sugar
Directions
  1. Melt the butter, and in a large bowl combine it with hot sauce, brown sugar, and vinegar.
  2. When wings are done, add wings to mixture and coat.

DRESSING

Ingredients

  • 1/2 cup crumbled blue cheese
  • 1/2 cup buttermilk
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Kosher salt and freshly ground black pepper to taste
  • 1 bunch fresh chives, minced
Directions
  1. To prepare the dressing, place the blue cheese, buttermilk, and olive oil in a medium bowl and stir together with a fork, mashing a little to break up the cheese.
  2. Season with the lemon juice, salt, pepper, and chives.
  3. Chill until serving.

My husband and I like ours medium spicy, but if you want to add some heat, just swap in Frank's XTRA Hot Sauce and go to town! :)

This Super Bowl Sunday... How About Hosting a St. Jude Game Day Give Back Party

I received an email from Sarah Newman at St. Jude Children’s Research Hospital asking me to share something I thought was great, their St. Jude Game Day. Give Back. party idea.

To give you some background, St. Jude Children's Research Hospital is internationally recognized for its pioneering research and treatment of children with cancer and other deadly diseases.

It costs $1.7 million a day to operate St. Jude, and more than 75 percent of that comes from the public through charity. And, no family ever pays St. Jude for anything – St. Jude covers the cost of treatment, travel, lodging and food for each patient and a family member.

This Feb. 5th, St. Jude is calling on people across the country to party with a purpose on Super Bowl Sunday, by hosting a party for St. Jude Game Day. Give Back. to help kids with cancer and other deadly diseases at St. Jude Children’s Research Hospital.

St. Jude Game Day Give Back encourages football fans to combine their passion for the sport with a good cause.

There are some great fundraising incentive items for hosts as well, like a St. Jude party cooler, a Game Day. Give Back. picture frame, a football chip and dip platter and a corn hole set depending how much money you raise.
